He spent his college years eating his way through the city's night markets—falling in love with everything from fiery Korean BBQ and zesty Thai street food to those classic NYC taco runs that define our city's late-night culinary spirit. The spark hit him inside a bustling Manhattan sushi bistro.

Voices from Not a Taco
"I came in expecting a gimmick and left with a new lunch habit. The shells stay crisp all the way back to my desk, the fish tastes clean and cold, and the portions actually fill me up. Ordering ahead takes two minutes and it's always ready when I arrive."
Pause. Sip. Enjoy.
History of [Not] a Taco
Staring out the window, he brainstormed an idea that would challenge New Yorkers' expectations: something impossible to ignore, uniquely creative, and bold. In a flash of inspiration, he merged his two culinary loves into a single piece of edible art: The Sushi Taco. Turning a daydream into reality required brutal kitchen alchemy. Early trials were a nightmare of soggy seaweed and shattered nori. To master the fryer, our founder engineered a secret, microscopic batter skin using a specialized formula. The result? A structurally flawless, deeply golden shell with an unforgettable crunch. When he served the first prototype to his family, they knew he had discovered something special. So, why the brackets [ ] ? Look closely at our name: [Not] a Taco. The brackets [ ] are the literal architectural blueprint of our signature, perfectly curved shell—defying the sharp V-shape of a traditional taco. By telling you what it isn’t, we invite you to discover what it could be. Is it a sushi roll reimagined as street food? Is it a taco reborn in Tokyo? We leave that beautiful debate to your palate. Step inside the brackets and explore a boundary-breaking menu built by a New Yorker, for New Yorkers. Welcome to the flavor revolution.
